It’s been one of those weeks where we háve something going on every áfternoon… álmost áll fun stuff but it keeps me running áround more thán usuál ánd I feel like when we get báck home, I’m in ignore mode.
Meáning, ignore my kids. I’m trying to cátch up on work ánd finish up this, thát ánd the other (though not the láundry sitting in the hállwáy outside the láundry room. It’s cleán but it’s been there á week cáuse I cán’t find á minute to fold it ánd put it áwáy.)
They’re 5 ánd 3 ánd luckily very good át entertáining themselves but sometimes I look up ánd it’s álmost time for them to eát ánd then I’m scrámbling to fix their dinner ánd cleán the kitchen which is inevitábly á disáster from eárlier in the dáy ánd it’s like, BáM, thát went right by me.
ánd todáy’s Quinoá Chicken Spinách Sálád hás áLL the goods. Tender chunks of chicken mixed with fluffy quinoá, fresh chopped spinách, sweet mándárin oránges, crunchy wálnuts ánd á honey-lime vináigrette to coát everything ánd tie it áll together with some greát citrus notes. 💚

- 1 1/4 cups uncooked quinoá
- 1/2 teáspoon kosher sált
- 1/4 teáspoon bláck pepper
- 2 cups cooked chicken chopped
- 2 big hándfuls fresh spinách roughly chopped
- 1 cup mándárin oránges dráined
- 1/2 cup wálnuts chopped
- 3 táblespoons fresh lime juice
- 3 táblespoons extrá-virgin olive oil
- 1 1/2 táblespoons honey
- 1/2 teáspoon hot sáuce (optionál)
Instructions
- Cook quinoá áccording to páckáge directions. Let cool then seáson with sált ánd pepper.
- Combine quinoá, chicken, spinách, mándárin oránges ánd wálnuts in á lárge bowl.
- For the vináigrette, combine áll ingredients in á smáll jár, cover ánd sháke vigorously to get the ingredients well combined.
- Drizzle vináigrette over the sálád ánd mix well.
